There is nothing more comforting on a cold winter’s day than a piping hot bowl of soup teamed with crusty bread, and nothing can be simpler to make.
Some people use a soup maker which can be useful if you want to be able to simply put all the ingredients in the soup maker, turn it on and an hour later enjoy your soup but making soup from scratch is not difficult to do.
The first decision to make is to decide on a recipe or make up your own. Any vegetables that you have handy can be made into soup but at this time of year root vegetables such as carrot, parsnip and potato make a delicious combination. In the summer months a lighter soup may be preferable so pea, sweetcorn and courgettes may be among the ingredients chosen.
Chopping and preparing the vegetables is probably the most time consuming part of the process but if time is limited then ready prepared veg can be bought. Roasting the veg for a short while before adding to the stock will give the soup an added delicious flavour.
Once the vegetables are cooked with the stock, add a few herbs or spices of your choice to really boost the flavours then liquidise with a handheld blender.
Finally sit down, relax and enjoy your delicious homemade soup.
